From time to time we encounter new
research into the health benefits of certain
foods. Today it is new research on
strawberries presented at the Biennial Berry
Health Benefits Symposium in Tampa,
Florida. A study at the University of
Nevada, Las Vegas supports the belief
strawberries can improve cardiometabolic
risks, specifically that two and one-half cups
of raw strawberries a day significantly
improved insulin resistance and decreased
levels of blood sugar while relaxation of
blood vessels improved within one hour of
consuming strawberries. Lead investigator,
associate professor Arpita Basu says the
study provides further evidence of the role
of strawberries in a “food as medicine” role.
